Nutrition:
With
their
high water content (more than 95 percent), zucchini
squashes are very low in calories. Zucchinis contain
useful amounts of folate, potassium and vitamin A and
C.
Taste:
Very
moist
and
mild in flavor. Slightly on the sweet side rather than
bitter.
Uses:
Zucchini
can
be cooked by steaming, frying, sautéing, or baking and
they are excellent when sliced and grilled. The meat
of this vegetable is also a very versatile ingredient
for a variety of other foods such as breads, cakes,
bars, and other baked goods.
Substitutions:
Other
members
of the squash family may substitute such as patty pan
squash and summer squash.
Storage:
Zucchini
is
fragile
and should be handled gently. Store in the
refrigerator in a plastic bag. Try to use within 7
days.
