Cilantro
contains
vitamin C and smaller amounts of vitamin E,
calcium, iron and niacin. The detoxification
properties of cilantro received additional
substantiation a few years ago, when it was
discovered that cilantro helps in the chelation of
heavy metals such as mercury and lead.
Taste:
Cilantro
offers
a bitter and very strong aromatic flavor that leaves
the palate cooled and cleansed.
Uses:
Can
be
added to both raw and cooked dishes for it's great
flavor and aroma.
Substitutions:
Parsley
or
Basil
(neither approximate flavor).
Storage:
Cilantro
can
be stored by placing the stems in water (replace
every 2-3 days) and placing in the refrigerator.
Excess moisture on leaves will ruin the leaves.
